07-04-07_0934_chickencash.jpgWhat a guilty pleasure it is to cook my dinner in the microwave. This recipe, from the March 2007 issue of Everyday Food, was super-easy to make -- all in one bowl in the microwave!

I did choose to serve this with couscous, which is also too easy to make (soak for a few minutes). So once the chicken and couscous and cashews were stirred together, we had a nice, tasty meal.
