The “Creamy Cinnamon Horchata Popsicles,” from The Candid Appetite, are definitely that: creamy, like rice pudding on a stick. For the first time ever, I made my own rice milk here (I never thought to do this before). Purée uncooked, soaked rice, and what do you get? Exactly.

An authentic “horchata” drink (Mexico via Egypt) is sweet rice milk with lime and cinnamon added (no dairy). This popsicle models itself on the rice milk and the cinnamon, but then dips into dairyland with sweetened condensed milk and heavy cream. Creamy, dreamy.

The cinnamon is right on. Cinnamon and rice pudding are a combined, comforting flavor memory in my head, from way back.

The yield of 10 popsicles for this recipe is a complete lie, I’m sorry to say. Make this recipe as instructed (with the 4 cups of hot water) and you’ll make 15 or 16 popsicles. Not that this is a problem, really…
