Root Beer Float PopsicleHere’s another popsicle.

I’d like to say that I’ve had a vision. A dream. Root beer + vanilla ice cream…on a stick.

But I can’t take credit for this awesome masterpop. It seems this fantastic concept has gripped others. So here’s one for all those dreamers out there…

Inspired by the “Root Beer Float Popsicles” from Butter Me Up Brooklyn, I rode the easy path to popsicles. Instead of dutifully making my own root beer syrup, I poured a 12-oz. bottle of flattened Virgil’s Root Beer into my blender. Then, I dumped in a softened pint of Brooklyn Bell White Vanilla ice cream. Blend it into a liquid, then pour into 8 popsicle molds.

Yes, I feel a bit sleazy, repurposing pre-made ice cream into my own thing. But how cute! My bottle and my pint became 8 popsicles, frozen to perfection.

My nine-year-old taste tester revealed: “You could hardly taste the root beer, but the vanilla’s very strong. And I like vanilla. If you’re a vanilla fan and a root beer fan (like me) you would like this.”
