Blueberry-Ginger Coconut Cheesecake PopsicleHere’s another popsicle.

Even though layered popsicles are passé (says me), I was still wowed by the name of the “Blueberry-Ginger Coconut Cheesecake Popsicles,” from The Floating Kitchen. That’s quite a powerhouse of flavors! It promises a lot, and sure enough, it delivered it all.

I simmered the blueberry-ginger layer, cooled it, then poured a bit of it into my popsicle molds and let it freeze for 15 minutes. Admittedly, I lost my patience with the layering at this point. Here’s what I did: I combined what remained of the blueberry-ginger stuff with the coconut-cheesecake stuff, then poured all of this into the popsicle molds. I want to encourage someone to combine everything from the onset, to create a delicious, purple combo.

The flavors here were complex and lasting. There’s a “ginger wow” blast and there’s a fantastic creaminess that’s popular with all audiences. This is a great one. Try it.
