The Happiness Diet was published by psychiatrists Tyler Graham and Drew Ramsey in 2011. In it, they celebrate the victory of mood-boosting ingredients, and these are included in the “Pan-Seared Salmon with Miso Watercress Pesto & Lentil-Black Rice Salad,” from the January/February 2016 issue of Every Day with Rachael Ray. I giggled at the notion of black rice leading to “increased optimism.”
Already, I love the ingredients: salmon, pesto, turmeric, miso, black rice, almonds, lentils. Already, I’m happy.
The watercress pesto rises above the basil pesto I’m accustomed to. It’s fresh, tart, green -- thrilling, really. Message here: if you see good watercress, grab it and make pesto.
This recipe is so easy to pull together. Salmon is an “easy fish” that must appeal to all non-cooks.
Celebrate this meal and call it “happiness.” Increased optimism, indeed.
