Creamy Chocolate Mint PopsicleCreamy like a fudgesicle. I need to shout out about the “Creamy Chocolate Mint Popsicles,” from The Bojon Gourmet. These are enchanting, thanks to their taste and texture. The “vegan” point is not what moves me, here.

You see, these pops don’t need to hop on the vegan bandwagon to achieve glory. Really. The chocolate and mint combo is a winning powerhouse. The creaminess comes from coconut milk and from cashew milk, which you make for yourself. Don’t be frightened of cashew milk: soak raw cashews, then blend them.

But! Make your own mint syrup, too. The basic “simple syrup” ratio is equal parts water and sugar, dissolved in a small pot on the stove top. Steep lots of fresh mint leaves in this syrup. I did weigh all of my ingredients: 50 grams of mint equals 1.76 ounces. That was a whole bunch of glorious mint. ‘Tis the season of fantastic and scraggly mint, growing in all sorts of messy bunches. Get some for yourself.

Luxuriate in the dreamy scent of that minty syrup.

The amount of batter in this recipe pours exactly 10 pops. Nice. Bewitched, your audience might say something like, “I don’t really like mint. Can I have another one of these?” (Dave)

Stand by for more summertime pop-ups soon.
