The “Cookie Dough Glow Pops,” from Liz Moody’s book, are textured like that -- not quite frozen, soft, chewy, and a bit odd.

Soaking cashews and blending them into milk is a triumph. A bit of almond butter, honey, and chocolate chips are winners too. I poured nine pops with this recipe.
