Chocolate Drizzled Peanut Butter PopsicleYou know I don’t drizzle -- it’s not my style. But here I am with a drizzled popsicle. And I’m pleased to report that the “Chocolate Drizzled Peanut Butter Popsicles,” from A Couple Cooks, were a brilliant success.

Too easy to blend the six ingredients in the blender, and happy to include a banana. Once my pops freezed, I removed them from their molds and laid them on a parchment paper-lined cookie sheet that fit back into my freezer. I let the pops firm up again, while I melted the chocolate chips.

Instead of melting the chocolate in a microwave, I melted my chips in a small pot on the stove top, quick, with a tablespoon of grapeseed oil. Again, I pulled the hardened pops out of the freezer, to be drizzled with that melted chocolate off a spoon.

Rather than succumbing to edible glitter, I crushed some raw pistachios and sprinkled them on all the drizzled pops. Neat! Back into the freezer.

These taste so creamy, with the peanut butter and banana and coconut milk. And the crispy chocolate really dazzles. A dazzling drizzle, indeed.
