I’ve been posting popsicles for five summers now, and I’ve made sure to never repeat a recipe. The “Peach, Honey and Thyme Lemonade Popsicles,” from Golubka Kitchen, intrigued me with the inclusion of thyme. I haven’t done this yet. So here it is.

Showcasing the juice of five peaches plus the juice of five lemons, the lemons win with a sour pucker pop. The peaches gave me a pretty color.

In my herbal infusion, my ambiguous “bunch of thyme” turned out to be an overbearing bush -- too much for a gentle popsicle. The pronounced thyme tasted grassy and even meaty. Indeed, I was too heavy-handed with the thyme.

You’ll need to be strong, to appreciate this popsicle. Keep in focus: think “lemonade.” You can like it. I did.
