Here’s an odd and easy and fast stunt to pull off with your dinner time. “Eggs in Clouds,” from, are an exercise involving whipped egg whites.

Equal parts parmesan cheese and chives and bacon provide equal, simple, important flavors, as they are folded into the stiff peaks of egg whites. These enhanced whites are spooned into mounds on a baking sheet. Like fluffy pillows! With a deep well in the center!

After baking these welled pillows at a super-hot 450 degrees for a mere 3 minutes, they’ve firmed enough to allow each yolk to be returned to the wells. Bake for another 3 minutes to set those yolks and you’re ready to eat. Crazy. Silly. Tasty.

Next time, I want the make the “Strawberry Snacking Cake,” from the June 2019 issue of Bön Appetit. What qualifies as a “snacking cake”? Honestly, I’m not quite sure. Come back to my site next week, so we can -- perhaps -- figure it out together.
