If you have buttermilk, you can bake soda bread. The “Cheese and Herb Irish Soda Bread,” from Simply Delicious, reminds us that it’s that time of year -- again -- to enjoy this firm, crispy bread, without bothering with yeast.

Baking in my Dutch oven is such a pleasure. For the batter, you whisk, pour, and use your hands. My herb of choice was parsley. It’s not a smooth dough; it’s described as “shaggy.”

I baked for a long time: 80 minutes! I needed to hear that “hollow sound” when I tapped the top of the baked bread.

Taste the crispy crust and the firm/cheesy bite of the bread. Spread on some butter and enjoy the best of soda bread.
