Baking with tahini is something I don’t do enough. So, here’s my chance to do it. Tahini, if you recall, is a paste made of sesame seeds, similar in texture to peanut butter. The attractive experience here is enjoying the unique, alluring scent of that tahini all through this process.

I’m gushing about the Fig, Blackberry and Tahini Cake, from The New Way to Cake, by Benjamina Ebuehi. The author describes it as a cake that reminds her of the “transitional period between the end of summer and the arrival of autumn,” but it’s not like that in this hemisphere. Rather, it’s more like the beginning of summer, when we can access juicy blackberries and fresh figs.

This is a single-layer, 9-inch cake. Easy. Smell the tahini throughout as you mix the lovely batter, until it’s pale and creamy. I baked the cake for 42 minutes, until it was “deep golden brown.” While it cooled, I mixed the topping.

Now, let’s talk about this topping, and its glorious result. Mascarpone is creamy and light, like cream cheese, but it doesn’t possess the subtle saltiness or sweetness of cream cheese. Instead, it’s a blank canvas for the ultimate texture of this topping. I replaced the necessary cream in this topping with half-and-half, and had no problem.

While my cake continued to cool, I made sure to place my topping in the refrigerator for a while, so it wouldn’t melt on this oh-so-hot day. This gave me a topping that spread perfectly -- not too thick, not too thin. It’s a topping I was quite proud of. My best yet?

And the cake! Fluffy, moist and fabulous. Again, I’m delighted by my result.

Here’s what you get in each bite: the soft, vegetal figs, the sharp, tangy blackberries, and the toasty crunch of sesame seeds, sprinkled on top. The seeds complement the taste of the tahini, which you cannot disregard.

An attractive, enticing, gorgeous cake. You can easily do this.
