I’ve finally taken the time to bake potatoes, twice. This recipe from SkinnyTaste called out to me, thanks to its inclusion of guaranteed winning ingredients: potato, broccoli, cheese (and some hidden cauliflower).

I did not discredit the recipe by using a microwave for any of this. While I baked the potatoes for an hour in the oven, I boiled the broccoli and cauliflower and grated the cheddar.

After letting the baked potatoes cool, I scooped the flesh out with a teaspoon (easy). Once combined with the boiled cauliflower, buttermilk, and cheddar, I simply mashed the mix with a fork and spoon -- why use a hand blender?

I made sure to stuff all of my filling into the eight potato shells. I baked these for 10 minutes to heat and melt the cheese, and victory. Cheers from everyone.
