Ground allspice, ground cloves, and ground cinnamon are spices to remind us of autumn. But of course, we’re closer now to spring than we are to fall. Luckily, the “Jam Cake,” from Little Everyday Cakes, by Candace Floyd, is a moist and nutty cake to enjoy, regardless of when we bake it.

Butter and sugar beat until fluffy (always a victory). Add the eggs and celebrate the bright yellowness. But then, add the fruit jam and we have purple dough. That’s a neat change.

I bake for 50 minutes, then allow the cake to cool completely. Overnight, in fact.

Now, let’s talk about this “Caramel Frosting.” At first, I think, “Why are we using this intense stuff?” But it turns out, this frosting is ideal for this cake. The science of creating caramel intimidates me, I admit. The short ingredient list requires boiling and melting and reaching the “dark amber” stage. Then, there’s the sputtering cream, the stirring, and the temperature. We know what we want. We know the thrill of caramel.

Alas, my cooked cake is not purple. Instead, the tan cake showcases its pecan bits. I’m not sure why we call this cake a “Jam Cake.” The jam plays along, but shouldn’t get top billing. Those spices are the dazzling feature.

Be wowed by the moist, nutty cake and the sweet, rich, creamy frosting.
