So here we go with another coffee cake. The “Sour Cream Coffee Cake with Coconut Streusel,” from Candace Floyd’s Little Everyday Cakes, qualifies as a moist, tender cake, topped with streusel. The cookbook’s author recommends eating this cake with your morning coffee, but I want to eat it all the time.
I grease my cute 8-inch square cake pan, then stick parchment paper onto that, greasing and flouring. I’m looking ahead to making this cake easy to remove from the pan once baked.
Stir together the crumbly, flaky streusel, scented with the coconut shreds.
The batter looks like white custard in the mixer.
My cake bakes high, but needs 55 minutes to bake until a tester inserted in the center comes out clean.
Let’s thank the butter and the sugar and the sour cream for giving us a soft, moist cake. If this cake is “not too sweet,” as the author declares, that’s fine with me. The streusel delivers alluring sugary crumbles. And here’s the bonus: we also have a layer of streusel within the cake.
Now, do I taste the coconut? Not really. I know it’s there, and it provides a certain texture.
Allow yourself to be surprised by this cake.
