Here’s a perfect little chocolate cake: soft and fluffy with a gooey sweet topping. The “Tiny Texas Sheet Cake,” from Candace Floyd’s, Little Everyday Cakes, is labeled as a “potluck favorite.” It’s also said to be typically baked in a jellyroll pan. But, neither of these interest me.

You see, rather than bringing this cake to a potluck, I will eat it all by myself.

And, a jellyroll pan -- a 15- by 10-inch pan with 1-inch sides -- is that pan where you bake a thin cake in order to then roll it up with frosting. Instead, I’ll use a low-stress and reliable 8-inch square pan.

What does Texas have to do with this cake? Allegedly, buttermilk and pecans (both included in this cake), are favorites among Texans. Whatever.

Let’s get to it. See how many of the ingredients in this recipe are “½.” Take a look: ½ cup butter, ½ cup water, ½ tsp. baking soda, ½ tsp. salt, ½ tsp. ground cinnamon, ½ cup buttermilk, ½ tsp. vanilla extract, ½ cup pecans, ½ cup coconut. Do you get it? It’s kind of cute.

Cocoa powder makes us swoon with its yummy scent, melted with butter. Make sure to whisk out the lumps when boiling the butter/chocolate mix. The ultimate blended batter is smooth, silky, and pourable.

Bake the cake for 30 minutes, until a tester comes out “almost clean.” Throughout this process, smell the chocolate.

Now, prep the topping. Simmer and stir until it’s yellow like the egg yolks (don’t forget to include the ½ tsp. of salt that the recipe neglects to mention).

Look at the coconut flakes is this mix. Don’t they look like onions in the thick topping? Just a little silliness.

This is the best kind of moist chocolate cake. Easy to make with all the “½’s.” And no mixer necessary, folks. Only high rewards. Make it.
