A “fruity beauty.” That’s what Candace Floyd calls her “Blackberry-Almond Upside Down Cake,” from her Little Everyday Cakes cookbook. Well, I suppose it is just that.

Summertime blackberries -- once again -- in a summertime cake. First, the recipe asks us to coat the berries with 1½ Tbsp. of sugar, then place them in the cake pan that we’ve papered, buttered and dusted with flour. I’m so afraid these sugared berries will melt in my hot and humid kitchen so, after layering the pan with the berries, I go ahead and place this pan in the refrigerator. This way, I can calmly proceed to mix the cake batter, without worry.

I weigh the flour: 200 g = 7 oz. Milk and yogurt and all this butter (9 Tbsp.!) give us a batter that looks like rich custard. I do smell the slightest bit of almond, from the extract.

After pouring this luxurious batter over the blackberry layer in the (cool) pan, I needn’t stress about “smoothing the top.” After all, this “top” will ultimately be the “bottom.” Yes.

I bake for 50 minutes.

Now, this turns out to be the best kind of cake. And, it “turns out” of the its pan with ease, inverted to reveal its blackberries. Soft and moist. Thank you butter! And we do taste some almonds here, in the final cake.

Floyd says this recipe is “great for breakfast.” But I’ll eat it any time, honestly.
