Strawberries! Of course, summertime. I chose to bake the “Strawberry Cake with Cream Cheese Frosting” for this month’s Cake Slice Bakers team, simply because I have not yet included fresh strawberries nor cream cheese frosting in any of my previous cakes from this year’s Little Everyday Cakes. It’s an adorable cake. I do like the 6-inch round cake pans.

I made sure to weigh my strawberries: 8.5 oz. whole, 1.38 oz. sliced, extras for decorations (a one-pound package of strawberries was enough for all this). I weighed the flour: 6.33 oz. And I weighed the sugar: 8.75 oz.

The cooked strawberries aren’t jammy -- after all, there’s no sugar added in the saucepan while they boil. However, their texture and scent are different than the fresh slices, which are also folded into the batter. Clever.

The batter, as described, is thin. I made sure to evenly pour the batter into my two prepped cake pans. They baked for 45 minutes, until the tester was “almost clean.”

Now, let’s talk about the perfect frosting. I did make a double batch, as the cake recipe suggested. The frosting is not too dry and not too wet; it spreads beautifully. We cannot ignore this: it’s a “wow” frosting. I enjoyed layering and frosting this darling little cake.
