Here’s (yet another) soft, buttery, chocolate cake, this one with a thick, sweet frosting. I mix the batter of the “Kahlua Cake,” from Candace Floyd’s Little Everyday Cakes, and -- I can’t deny -- the Kahlua scent immediately takes me to the comforting world of White Russians.

 

 

 

But, back to the cake. Kahlua and coffee and cocoa. Buttermilk and butter and sugar. Start mixing the two eggs into the batter, and you smell that unmistakable chocolate.

I need 45 minutes to bake my two 6-inch cakes, until “the tester comes out clean.” When removed from the pans, the sides of the cakes are perfectly smooth (thanks to the parchment paper) and evenly colored (thanks to the dusting of cocoa).

After baking, the centers of my very soft cakes sink. No matter, I’ll cover the dents with frosting. These two soft cakes are tricky to cut into four layers. Again, can I fix these somewhat disheveled layers with the frosting?

A lot of butter and a lot of sugar is in this frosting. I add 3 Tbsp. of Kahlua to make it even sweeter. The frosting spreads beautifully. Does it redeem the faults of my cake layers? I think so. Take a bite of this ample cake and get what you came for: another soft, buttery, chocolate cake.
