Do you have a history with red velvet cake? Childhood memories? I don’t. I haven’t eaten it and I haven’t baked it. This is why I’ve chosen this cake as my baking challenge of the month: it’s my chance to make it my own. I want a soft cake, playfully colored red, topped and filled with a sweet creamy frosting. Here it is.



Mix the batter and smell the potent scent of vanilla.

The batter is light and doubled in 5 minutes.

Eyeball an even amount of batter in each of the two pans. The batter is not too thick.



Bake the two pans for 30 minutes, until a tester is clean. While the cakes are cooling completely, prepare the cream-cheese frosting. Patiently blend the frosting. We do not want lumps.

Refrigerate the crumb-coated cake for a few minutes, along with the remaining frosting. Then, frost the cake sides with that chilled (and re-mixed) frosting. It’s an ideal artistic platform.

This is a soft cake that slices well. It’s not too fragile. A slice holds together.

Take your first bite and taste the cream cheese. Close your eyes and taste another bite (in order to forget about the “redness”). You are tasting a moist cake—a little rich, a little chocolate.

The sweet, smooth frosting seals the deal.
