Surprise, surprise. A “modest” cake (Another blueberry muffin cake?! I’ve done this before!) is actually a cake to be proud of, to bake and to eat. It is, after all, bigger than a simple muffin.
The recipe for “Blueberry Muffin Cake” is unapologetically included in the Zoë Bakes Cakes cookbook by Zoë François. And that’s good for us.
A very small amount of whole-wheat and almond flours are included in the batter along with all-purpose flour.
The stand mixer (rather than a food processor) does the perfect job to mix all of the ingredients together.
Many fresh berries are swirled in. I look forward to a very-berry cake.
Cook for 45 minutes until golden brown. Then sprinkle the sweet walnut topping over the top, before returning the cake to the oven.
A tester comes out clean after another 55 minutes of baking. Cover the cake with foil after 40 minutes of baking, so as not to burn the walnuts. The baking time is this long because the berries are keeping the inside of the cake wet.
The cake tastes surprisingly like a fluffy muffin, with many pleasing, juicy berries. The sweetness of the nutty top takes some of the spotlight away from the walnuts. The cake is easy to eat.
A dollop of ice cream can never be wrong. Summery ice cream partners with summery blueberries.
