Pound cake evokes happy hums. People have been baking pound cakes for the past two centuries. Why does everyone like this cake so much? I’ll say it’s the firm, reliable, recognizable, buttery softness — butter, flour, sugar, eggs in all the right places. Note that the sugar is confectioners’, rather than white or brown. And see there’s a lot of vanilla in this adorable cake.

 

My pound cake is an interpretation of the recipe found in Zoë Bakes Cakes, by Zoë François. Her recipe is written to bake two pound cakes, where she gets to use a pound each of butter, sugar, eggs, flour (the “pound” cakes). I’ve adjusted her recipe in order to bake a single cake, so I’ve reduced each pound to 8 oz. This might not be as sexy, but it’s certainly a wonderful cake.

 

Whip the butter and the sugar for 5 minutes, and see it become light and fluffy. It looks and feels like whipped cream. Certainly, this fluffiness is what makes the cake rise high in the oven.

I take the liberty of stirring one cup of frozen fruit into my mixed batter.

Bake for 1 hour, 15 minutes. Sure enough, the cake has risen high. Smell the vanilla.

I mix together the simple “Confectioners’ Sugar Icing,” to drizzle over the cake. It’s just sugar and cream. I mix in a bit of fruit jam, just so I can add some color to my icing.
