I do enjoy baking a six-inch-round cake. It’s cute. And any cake-baking stress is reduced as the size of the cake is reduced. Does this make sense? Take a look at the “Mexican Chocolate Cake,” from Little Everyday Cakes, by Candace Floyd. A chocolate triumph.

Unsweetened cocoa gives us all the chocolate we need for this cake. But, I’m always cautious when using cayenne pepper in anything I cook -- it’s always too, too hot. I include the mere ⅛ tsp. (or less!) in my batter here. This little bit of spicy heat is what makes this cake “Mexican,” I suppose.

I patiently mix the batter until it’s smooth. The batter is not too thick, so it pours nicely into my little cake pans.

The batter’s depth is only 1½ inches deep in each pan. After baking for 38 minutes, the cakes rise to 2¼ inches high.

Now, let’s talk about the “Mexican Chocolate Ganache” that frosts this darling little cake. See how there’s no added sugar in this frosting. We’re making whipped chocolate. And, oh boy, the chocolatey scent is so great.

 

Take a bite of this pillowy cake and be thrilled by its texture. I’m so proud of my chocolate achievement.

So, where’s the “Mexican?” Is the cake spicy? Perhaps in the first bite. Is the ganache spicy? Can we notice the Kahlua? Maybe in the first bite.
